Technique

Mixing, resting, balling, stretching, topping, and launching with control.

Technique is how good formulas become repeatable pizza. It is the difference between knowing the numbers and knowing what the dough is telling you.

Handle dough with intent

Mixing builds structure. Resting makes the dough easier to shape. Balling creates tension. Stretching preserves gas. Topping and launching decide whether the pizza arrives in the oven cleanly.

Small habits matter: use enough flour to prevent sticking, not so much that the crust tastes dusty. Stretch from the center outward. Keep the rim inflated. Top lightly when the bake is fast.

Technique should make the dough calmer, not more stressed. If the dough fights you, pause before forcing it.
